Taste Notes & Food Pairings

Tasting Notes

Tequila Ocho Reposado is crafted from 100% blue Weber agave harvested from a single estate, highlighting the unique terroir of each vintage. Rested for 8 weeks and 8 days in used American oak barrels, it preserves the purity of agave while gaining subtle barrel influence. The nose opens with aromas of cooked agave, vanilla, and light oak, accented by citrus zest and a touch of spice. On the palate, it is smooth and balanced, offering flavors of honey, caramel, pepper, and roasted nuts, with hints of fruit and herbs. The texture is clean and rounded, with a perfect balance between freshness and oak. The finish is medium to long, leaving notes of agave, vanilla, and gentle spice.

Food Pairings

Starter Fresh ceviche or shrimp tacos, complementing the tequila’s citrus and spice.

Main Course Grilled chicken or pork carnitas, where the reposado’s caramel and oak enhance savory flavors.

Cheese Queso fresco or Manchego, pairing well with the tequila’s creamy and nutty character.

Dessert Flan or churros with cinnamon sugar, echoing the tequila’s caramel and spice notes.

Tequila Ocho

Tequila Ocho is a premium, single-estate tequila brand founded by master distiller Carlos Camarena and tequila ambassador Tomas Estes. It is unique in the industry for producing “vintage” tequilas—each release comes from agave harvested from a single field, with the label naming the field and year of harvest. This showcases the influence of terroir, much like fine wine, allowing drinkers to taste the differences imparted by soil, climate, and location.

The agave is grown in the highlands of Jalisco, known for its mineral-rich red soil and cooler nights, which produce sweeter, more aromatic plants. Each plant is harvested only at peak maturity, usually between seven and ten years old. Production at La Alteña Distillery follows traditional methods—slow cooking in brick ovens, natural fermentation, and careful distillation in copper pot stills—to preserve the full character of the agave.

Ocho is celebrated worldwide for its purity, transparency, and craftsmanship, with each bottling serving as both a high-quality spirit and a reflection of its unique origin.
