Taste Notes & Food Pairings

Tasting Notes

Tequila Ocho Añejo Single Estate is crafted from 100% blue Weber agave harvested at peak maturity from a single estate, emphasizing terroir in each vintage. Aged for at least one year in used American oak barrels, it achieves depth while preserving agave purity. The nose opens with aromas of roasted agave, vanilla, and caramel, layered with oak, baking spice, and dried fruit. On the palate, it is smooth and full-bodied, delivering flavors of honey, toffee, roasted nuts, and pepper balanced by hints of citrus, cocoa, and herbs. The oak aging provides warmth and complexity while keeping the agave character vibrant. The finish is long and elegant, with lingering notes of vanilla, oak, and sweet spice.

Food Pairings

Starter Spiced nuts or charcuterie with fig spread, complementing the tequila’s nutty and fruity depth.

Main Course Grilled ribeye or roasted pork shoulder, where the tequila’s oak and caramel notes enhance savory richness.

Cheese Aged Manchego or Gouda, both pairing beautifully with the tequila’s nutty sweetness.

Dessert Flan or dark chocolate tart, echoing the tequila’s caramel, cocoa, and spice.

Tequila Ocho

Tequila Ocho is a premium, single-estate tequila brand founded by master distiller Carlos Camarena and tequila ambassador Tomas Estes. It is unique in the industry for producing “vintage” tequilas—each release comes from agave harvested from a single field, with the label naming the field and year of harvest. This showcases the influence of terroir, much like fine wine, allowing drinkers to taste the differences imparted by soil, climate, and location.

The agave is grown in the highlands of Jalisco, known for its mineral-rich red soil and cooler nights, which produce sweeter, more aromatic plants. Each plant is harvested only at peak maturity, usually between seven and ten years old. Production at La Alteña Distillery follows traditional methods—slow cooking in brick ovens, natural fermentation, and careful distillation in copper pot stills—to preserve the full character of the agave.

Ocho is celebrated worldwide for its purity, transparency, and craftsmanship, with each bottling serving as both a high-quality spirit and a reflection of its unique origin.
